Using dummy tiers

Hi folks,

I’ve been asked to create a 5 tier cake for someone who only really needs 4 tiers of cake – she has asked for the bottom cake (14 inches) to be a polystyrene dummy, with the 4 sponge tiers stacked on top.

I’ve never used a dummy at the bottom of a cake before and I’m a bit worried about how stable it will be?  I normally have a weighty and well dowelled cake at the bottom of my stack so this is something quite different for me.

Any thoughts?

Cake dummies are pretty solid but if your worried you can still dowel them. Or make the dummy tier in advance and leave to firm. Just store in a cake box
