Rich fruit cake

I’ve made a rich fruit cake for my sons wedding in 5 months will it keep being fed with brandy or should I freeze for 2 months then defrost and feed and will that keep ok

Fruit cake can keep for months on end as long as it is stored properly. Keep feeding it, turning it over each time to keep both sides fed. Wrap in several layers of parchment then cling, finally in foil and store in an airtight cake tin and place somewhere cool. If you prefer to freeze, that’s fine too. Freezing helps to break the fruit down and makes the cake even more moist. Avoid foil coming directly in contact with the cake as the acids in the fruit will eat into the Aluminium. 🙂
