Moulds made roses

Hi I would like to know if it’s okay to keep the moulds made sugarpaste rose in the fridge overnight or when I need to put on the cake that’s when I should make these sugarpaste roses? And for how long I can store chocolate ganache in the fridge or freezer?

Hi Sobia

If you are using gumpaste or fondant to make the roses from, they must not be kept in the fridge because they will become very sticky and not dry hard. If you are making them from buttercream it is fine to place them in the fridge. Ganache will last a good two weeks in the fridge if you put it in a ziplock bag and place that into an airtight container. Keep it well away from strong smelling foods like onion or garlic.
