Hi all

Im new here and to cake decorating and am gradually building up my equipment.

Im really struggling to find good knives and would love some recommendations.

The one Paul uses for carving cakes and the pink knife for cutting sugarpaste look great. Any ideas where to get them.

I also would like to know where Paul gets these little knives, bet they’re just craft knives, but Ii’d love to buy the same ones too.

Thay are florists knives  ask you’r local florists if she wil pick some up from the wholesalers   lesleya

The pink knife Paul uses  can be bought in most good kitchen shops eg Lakeland or online. I use Gustav knives, they are very expensive but I consider them to be the best.I have some which are 30 years old and still as sharp as when they were new. I’ve recently added to my collection an extra long serrated bread knife for torting cakes, an angled spatula for ganache and parring knife for cutting off excess icing. These will of course out live me by considerable years and, will no doubt be of benefit to my nearest and dearest!

Thanks all for your replies.

Have looked at the Gustav website and will definately be investing. Just got to decide which length of the serrated knife to get. 10″ 12″ or 14″.  Would be interested to hear how people get on with the different lengths. Will also get one of the parring knives to cut off icing.

I havent done any carving yet but am definately going to start. The online courses have really inspired me to try.

Hi jb, so glad you took the time to look at the Gustav knives. I have an extra long serrated knife for torting cakes, a normal size for carving and a small serrated knife for doing smaller more intricate work. It might be best if you start with middle length first, not everyone gets on with the extra long one as it can be awkward to manipulate when carving ( that’s why I have all three). These knives are extremely sharp so do be careful with them. You will have invested wisely, they will serve you for many years to come. Good luck with your caking!
