icing double barrel fruit cake

I want to put marzipan then sugar paste on a double barrel 8 inch fruit cake. I’ve watched Pauls tutorial, which shows how to do it with ganache then sugar paste, which is helpful, but as its fruit cake, I won be ganaching. Is it the same technique with the marzipan? will it cover the cakes ok without tearing?

Generally marzipan doesn’t tear as much as sugarpaste, you may find it just as easy to cover as normal. Alternatively, it may be easier to do the wrap round method. The seams blend in invisably and it takes the stress out of any tearing issues. Ensure all tiny fruit holes are plugged with marzipan and smoothed to create a smooth surface before covering. Once the marzipan is on, let it dry for two or three days in a well ventillated cake box. This will dry the oils which marzipan secretes and prevent any seepage into the sugarpast. Sharpen the edges just as you would for sugarpaste.

Ok thank you. Would I need to dowel the bottom cake? or is fruit cake strong enough to hold the weight of another fruit cake on top?

I would dowel yes. Fruit cake is very strong but for peace of mind, dowel! Best to be safe than sorry. Hope you get on ok with the covering. x
