Ganache recipe in Christmas book

Hi, I think the recipe in the Christmas book for ganache may be wrong (page 13) it states for 2lb cream you need 458g of chocolate, I did that and it is so runny, would it be ok to boil up the liquid again and add extra chocolate or melt chocolate and add to liquid.

It looks to me that it should be the other way around glen, I seem to recall that there was some mention of this, when the book first came out.

Thanks for reply, I have warmed up the ganache over a pan of water and added more chocolate.. Unfortunately I have never made it before so I do not know the consistency I hope I have not got it too thick now oh well I will see tomorrow.

Hi Glen

The recipe in the book is a printing error. Paul mentioned it on facebook a while back, the recipe to follow is either the online tutorial or from the chart here http://www.cakeflix.com/blog/how-to-ganache-cakes-without-gnashing-your-teeth
If you add some melted chocolate to your mixture it will set up. Please don’t boil the chocolate as it will burn and seize. Hope this helps.

Hi,
My friend got the book this week and I told her about the mistake with the Ganache.
There is a note from the printers inside the book, so anyone else getting the book now will hopefully get this information.
I have not got the book but she gave me a look at hers, so its now on my Christmas list, although to late for this year will do me for many years to come.
