Fruit cake sizing

Hi,
I have to make a fruit cake for a wedding cake tier which will be covered in marzipan & sugarpaste to be 5 ” in height. I will hav scale up the cake to get to a decent height . What height must it be before adding marzipan & sugar paste to get the height I require? I will be using massa so I don’t want to use a very thick layer of that.

That depends on how thick you will be rolling out the marzipan and icing. Best thing to do is to work out the depth of the two covering mediums, add them together and subtract from the height of the cake. You will need to ensure that the cake is the baked to the 5″. Eg, if you roll out the marizpan to 1/8″ ( approx 3mm) and the icing also 1/8″ (3 mm), you’ll need to trim the cake to 4 3/4″ to accommodate the the thickness of the two coverings.
However, it isn’t really essential to be that precise.
