First wedding cake.

Hi, I’m making my first wedding cake and pretty new to it all. They want a two tier vanilla sponge. Bottom 11″ and 9″. It’s for delivery on a Saturday and I work Tuesday to Friday 9 till 5. When is the earliest I could cook the cake? I’m worried I’m going to run out of time. Any help would be much appreciated. Also what’s the best way to stack as I don’t want the sponge to get squashed?

Hi Skemmy

How soon you bake largely depends on which recipe you are using. Please could you let me and I can give you better advice for best baking time line. Thank you for your help.
I’m using a Vanilla cake mix bought from Windsorscakecraft.co.uk. I’m also going to ganach it, topped with fondant covering. Do you know how long this will keep for and does it need to be put in the fridge with it being made with cream?
Yes pretty simple, 1st tier plain with a bow and silver jewel then 2nd tier quilted effect with pearls. Then a bought personalised topper.

Hi Skemmy

The sponge mix will have instructions on how long it will last once baked. Normally it is approximately 5 – 6 days.
Don’t worry about refrigerating the cake. Once the ganache sets, the cake can be iced and left at a cool room temperature, away from direct heat sources. Give yourself three days to bake and decorate and two day – three days for it to be consumed at it’s best. 🙂
