dripping ganache effect

Hi all,

I have to decorate a buttercream cake with dripping effect. I will be using white chocolate with whipping cream {35% fat} and dash of pink gel.

I just want to know the ratio of chocolate to cream for the dripping effect.

Normally white ganache for crumbcoating requires 3:1 ratio. However for a drip effect 2:1 ratio should be plenty. I just use melted white chocolate on very cold cake and it works a treat. I just finished decorating the cake with dripping ganache and it went well. as you told, I used 2:1 ratio.

However I FACED ANOTHER PROBLEM, my pink ganache turned salmon pink,which IS NOT looking good with other pink deco.

While coloring buttercream I usually add a dash of violet when making blue or pink buttercream but somehow this method didnt worked with the ganache.

any suggestion ?

Candy /oil based colours should give you a more vibrant colour with white ganache. Unfortunately the yellow tinge in white chocolate always prevents a true colour. Failing that, use super white candy melts just for the drips. Lots of people use royal icing with a little glycerine added so it remains soft instead of white chocolate ganache.

ps. If you need it for now, try brushing over the drips with pink petal dust to brighten up the colour.

I just added extra electric pink, although it still was not bright pink but looked good, but next time, candy melt it is.
