cake fell apart

please i need some advice ive been doing a cake today for a customer ive not meet before etc. its a 10″ square an she just wanted buttercream jam, iced and decorated.

now im really concerned that my top bit of cake completely fell apart ive buttercreamed it back together. and crum coated it etc but im concerned that when they cut into it they wont get a SLICE of cake ..

i dont have time to make another one.

do i tell the customer ?
do i not say anything and they might not even notice (maybe you never know )
do i give her a discount ?

any advice from you pros would be great x x

Hi AngieS

I just stick bits back with ganache the same as Paul does. The crumbcoat holds it all together and so does the sugapaste and the cake cuts into proper slices. I normally put the broken layer to the bottom and use the whole layer at the top and continue in the normal way. How bad was the break?

it was more of a puzzle put it that way lol.
think ganache would of been better but they wanted buttercream so im worried its going to slide and fall apart when they start cutting it x

i couldnt use the broken one at the bottom as id already got half way through an also needed a really nice flat top for what im doing x

I don’t think it will slide and fall apart because the weight of the sugarpaste will have melded it together. I’m sure it will slice perfectly well. Keep the cake in a cool environment between now and delivery.

I’m so pleased for you Angie. Now you know not to worry in future if the same happens again. We all learn from these little things but I agree, it’s such a worry at the time. x
