Buttercream ruffles on fondant

Hi,

I am making a cake that has white vertical buttercream ruffles.

The cake is Paul’s moist chocolate cake with dark chocolate ganache and I had planned on covering it with white fondant. Is it ok to pipe the buttercream ruffles onto the fondant? I am worried about the ruffles not sticking or the fondant getting sticky underneath.

Hi dizzyheights

I’ve never used buttercream on a large surface covered in fondant so can’t say how well it will work. I’ve piped buttercream on fondant as shown in the teddy bear cake tutorial and it has been just fine. Personally, if it’s a largish cake, I would either cover the cake with crusting buttercream or white chocolate ganache to seal in the cake. This would be a better base on which to stick the buttercream ruffles and would taste less cloying.
