Hi I have a 12″ maderia to make. My favourite recipe scaled up equates to an 18 egg batter. Will my kmix be able to cope with this?

It depends on the size of the bowl. I have the Kenwoods Major which has 6.7 litre capacity and would fill an 18 egg recipe three quarters way up the bowl. The machine copes but scraping down the mixture is hard work!

Mine is a 5litre..so am I going to have a problem?

Hi guccie906 I have a 4,6litre bowl on my mixer when I make a 12″ madeira I mix as much of the batter as I can. You have to be very careful though as it does nearly fill the bowl. When you have put in the last of the eggs transfer to a larger bowl and then fold in the remaining flour. I have done this several times and it comes out ok. Hope this helps.

I have a 5l bowl. My recipe is 18 eggs!! Seems a lot but they always work so don’t want to try another recipe. Could I make half the mixture at a time. Will half the batter be ok for 20mins whilst I’m making up the other half??

Depends whether you are using any baking powder. Baking powder recipes should be baked as soon as possible. Even so I don’t recommend it. What you could do is half the recipe and bake two separate parts. Keep baking temperature the same just keep any eye on the timing. This way you’ll get two even layers properly baked through without the worry of whether it will rise or not. If you get odd amounts like half an egg just use a smaller egg. I weigh my eggs out of the shells so it’s easier for measurements, but you don’t have to do that. Hope this helps, but if you need more information please come back.
