whitening white chocolate ganache?

Hello everyone 🙂

Has anyone successfully whitened white chocolate ganache to a proper white – any tips?!

I am making a cupcake bouquet for a wedding and they want piped white chocolate ganache in different colour flowers, including white… please can anyone help?

You could try using Sugarflair superwhite, the usage instructions is in the link.

Apart from that there is http://msk-ingredients.com/MolecularGastronomy/TricksoftheTrade/TitaniumDioxide
which is what I use for whitening white modelling chocolate so it takes colouring better.
You could use super white candy melts instead of real chocolate but I advise flavouring it with a little vanilla. The white artificial vanilla wouldn’t taint the colour in the same way as pure extract.

Merckens tastes better than the Wiltons. Failing super white ganache, how about making white chocolate buttercream with trex. You can’t taste the trex once the chocolate is mixed in with it, although made with real butter it still looks very white. If you’d like to try it make a small amount first for tasting. Hope this helps.

I have some sugarflair superwhite but wasn’t sure how it took to the chocolate. I hadn’t thought about the white chocolate buttercream – I think I’ll take this option! As long as it tastes yummy and white chocolatey and looks white 🙂

I wonder whether you could help bellescakes out with a problem she is having with rainbow dust edible sequines.
I know you used some recently and you left such a wonderful feed back on the results. I’m sure she would appreciate a few words on how you applied them. The cake she is doing is for her daughter’s wedding in less than a weeks’ time. I haven’t used those particular sequines so can’t give her an answer from first hand experience.
