Wedding cake worries

Hi,
I’m hoping someone can help, I have been asked by a friend to make her wedding cake but I go on holiday 11 days before her wedding! The cakes will be rich fruit so no problem there, but would I be able to decorate the cake and store it in a coo dry place for effectively 2 weeks ?? would the icing dis colour ?

Hello DottyDelicious

Your friends’s wedding cake will be fine, the icing will not discolour or deteriorate in any way at all. Keep the cake covered up in it’s box away from direct sunlight or any source of heat like radiators.

I do my christmas cakes well in advance, thats whats so great about fruit cakes. As long as you keep the cake in a box and in a cool environment there will be no discolouration.
