Using other paste for ruffle cake?

Hello, can I use sugarpaste or maybe modeling paste on the ruffle cake? Here in Greece the summer is too hot for chocolate paste to survive outside (at the venue) for 3 hours minimum …. because usually the cake is exposed from the beginning and cut after the dinner is served…

Hi DianaFirst

I’m not sure whether you mean the ruffle cake?? The rose ruffle cake uses gumpaste. The chocolate wrap cake uses chocolate paste, is this the one you mean? In which case I don’t know of any chocolate which can be left out in extreme heat for three hours.
If it is a different fondant you’re looking for, Carmas massa fondant is designed for extreme heat and can be bought from the German supplier here:

It can also be bought on Amazon.
The chocolate wrap cake would have to be placed in an air conditioned environment or perhaps a cold cake display cabinet under a canopy or some type of shade. I know cabinets can be hired from some wedding events companies, or perhaps you may know local refrigeration people who could put you in the right direction. If you do hire a cabinet, the cost would have to be passed on to the client. I would recommend that you speak with the client first.
Unfortunately chocolate can not take prolonged heat exposure. Hopefully other members will have some different ideas.
