You’ll need to judge that by eye. It needs to be thick enough to encapsulate the cake in a firm smooth coating.

The thickness fondant is rolled out will be determined by the brand which you use. Most manufacturers will have guides. All you need to do is google the brand and ask for quantities and rolling out guides.
