The lace on your Gothic Lace Cake

Hi Paul,

I am trying to make the lace for this cake, but after four attempts now, I don’t know what I’m doing wrong. I am filling the mould as you did, putting in the oven for 10-15min at 80C. First attempt cracked when removing from the mould, the others too soft and sticky. Can you offer any advice?

Hi Susan

I had the same problem and was pretty disappointed to begin with. Then I just left it to air dry overnight and it came out perfect. I’ve still yet to make it work the oven method, mine comes out good in some places and sticky in others. If your weather is humid, this too may be affecting the poor result.

Hi Susan
I am in the process of making the Ophelia [gothic] lace for a Wedding Cake.
i am using the ready mixed Gold, i put an oven thermometer in first just to make sure my oven was at the right temperature set at 80 degrees C, put the Gold liquid in the silicone mat put it in the oven for 10 minutes, took it out and let it rest for 10 minutes, put some Clare Bowman White over the top of the gold and popped it back in the oven for another 10 minutes, took it out and let it cool down and then popped it out of the mould.
The reason i put the white on the back was to make the lace a little more flexible to bend around my cake.
If i was going to use it as a Crown on the top of my cake then i would probably do 2 coats of Gold, which would make the lace a little stiffer.
I hope that makes sense.
