When I’ve done models I’ve just added CMC to sugarpaste and haven’t had drying out/cracking problems, have you tried adding a bit of Trex  to slacken it off a bit?

I have this problem with gum trag and tylose. I rub trex into my hands and knead well into the paste.

Resting the paste for a good twenty-four hours also helps.
