I have noticed on many of the tv cake programmes, that they crumb coat the cakes then put them in the fridge before putting fondant on. Also many of them also put the cakes in the fridge once they are finished and covered in the fondant prior to delivery. What do you think is the best method? I don’t put my cakes in the fridge, but wonder if I should?

I always refrigerate after crumb coat and before sugarpaste to set the crumb coat but I never refrigerate once sugar pasted. There have been loads of discussion on refrigerating sugar pasted cakes but I’ve never really liked thei idea and a lot of people are against it as it can cause the sugarpaste to droop.
