Preserving fondant

Hi, so I was wondering ..whenever I see these videos and others like it, usually the bakers have other cakes in the background, on their shelves etc so how do you preserve the fondant to like that, do you spray something? Also are those dummy cakes that have been decorated and been sprayed over with something ?! PleSe let me know!

Fondant can stay looking ‘nice’ for months if kept dusted clean and stored out of direct sunlight. The PME glaze spray also helps set it so a shellac coating forms and hardens. Some of the cakes you see on various tutorials are dummys … it’s a cheap way of decorating a style for portfolios and shop windows, they last for years, however they do fade with time. Some colours are not tolerent of too much light. Paul used to make all the tutorials using cake, he doesn’t now. The real cakes can be kept for months or until they begin to smell before being dumped.
