Gel or paste food colours will give you better results than the liquid ones. I use Rainbow Dust Pro Gel because they are extremely concentrated.

However there are other brands like Sugarflair, Wilton and AmeriColor. If using AmeriColor electric colours be careful to check the information as some are not allowed for use in food which is to be eaten.
How much to use?? add the colour until you’re happy with the shade of the batter. Colours do change slightly after baking. I usually make a shade very slightly darker than I want. Use a tooth pick and add the colour little by little until you’re happy with the vibrancy. If you want a really bright colour make the cake using egg whites only. Egg yolk can affect some colours to become less vivid or change the colour completely. There is a white cake recipe on the site. I haven’t tried it, however if you’d like to see it, it’s here:
