Hi Chris50

The most likely cause of a thick batter and crumbly cake is insuffcientl liquid. I’m sure you followed the recipe but an easy mistake made is using medium eggs rather than the asked for large. Sometimes it’s also easy to miss other liquids like buttermilk or water. I missed the oil once, although the recipe has butter that tiny amount of missing oil made a lot of difference in texture.

What % cocoa solids was the chocolate? I find 50% is good for baking. I don’t know how Belcolade reacts, I use Callebaute but really it doesn’t make that much difference. I also don’t let my mixture completely cool before introducing it to the dry mix.
