Overcooked 14inch vanilla sponge

I recently baked a 14 inch square vanilla sponge (Mrs Jones recipe) I normally use this recipe , but have never baked such a large cake before. I noticed that, by the time the sponge was cooked, it had burnt slightly round the edges. What is the best way to bake it.?

I would say to bake it in two halves rather than one deep cake. With large cakes the centre always takes much longer to bake and by the time it takes to set in the middle the sides are cooked and burning. You could also try wrapping the tin from the outside with lots of layers of wet brown paper or use bake even strips as shown here

Ateco making a set of 4 small heating cores which work really well by distributing the heat in the middle of the cake batter. They are placed flat side down in the pan before pouring the batter in. When the cake is baked and cooled remove them and fill the small holes up with some ganache. See the cores here:

I always double line the cake tin (inside and out) and this helps to slow down the bake o. The outside, allowing the middle to ‘catch up’. I wet strips of newspaper and wrap around tin. Then I wrap a long strip of foil around the paper. Works for me x
