Mrs jones Fruit cake cooking times

I have been cooking mrs jones recipe fruit cakes for 3 and a half hours as it says in the recipe. One is an 8 inch and the other a 6 inch and I’ve checked the smaller cake and it’s still not cooked. Should I take the cakes out or leave them as think they might still cook for a bit longer as the tins will be still hot when removed? Don’t want to over cook them. My oven is a fan oven .

If your cake is testing wet it will need to be baked on. Test the centre of the cake with a wooden skewer and if it comes out with just a little stickiness it may well be baked. Sometimes the stickiness is from the hot fruit.
If the skewer definitely has wet batter on it the cake still needs baking on. It’s a game of waiting and checking.
A wet cake will not continue baking once removed from the oven despite the tin being hot. Check the cake every 5 minutes until done. Sometimes it can be a little longer than the recipe states, every oven is different.

Cakes have been in for 4 and a half hours and 6 inch cake still not cooked. Set oven at half a degree but thinking maybe next time I should cook on gas mark 1. Wondered if anyone else has had same problem?

Several members have baked Mrs Jones’ recipe and all have given good feed backs. I can’t ever remember anyone saying they had a problem. Did you add more liquid than the recipe asks for? If you’re worried about the top of the cake over baking pop a round of parchment on top of it. I haven’t used Mrs Jones’ recipe, mine always contains a lot more alcohol and it always bakes through. How did it test with the skewer?
Try adjusting the temperature slightly, I bake in fan 140c.

I have just turned it up from 130 degrees to 140. Mixture didn’t have too much liquid in and I did put baking parchment on from the beginning which I have removed, hoping it will bake quicker. Been in oven since 6.15 and is now 11.15 nearly! Must be my oven.

I think you’re right. If you haven’t got an oven thermometre it might be a good idea to get one. Ovens do need re calibrating from time to time, a thermometre will soon tell you if the temperature is out. Hope it bakes through soon, you must be tired. x
