Hello sarah-jane

Most sponge cakes using this type of recipe keep moist for approx 5 days. If you brush on simple syrup to each layer the cake will keep moist for a couple more days. To make simple syrup boil equal quantites of sugar and water, bring to the boil for a couple of minutes, cool and use. It can also be flavoured to compliment the cake. As far as I know other members have covered the cake successfully with fondant although Mrs Jones is showing the cake covered in butter cream in the overview video. I don’t think I would use it as a base tier.

Sorry to be a pain ,does base tier mean I could not put a 6″ fondant covered sponge on top,I am trying to make a 10″ vanilla sponge covered in fondant with your chocolate cake 7″ on top and am having trouble finding a sponge that is not dry as all the 11 Madeira cakes I have maid are . I make them one size bigger than I need and cut c crust and top off I use a syrup but they are still dry that’s why I was going to try mrs jones or do you have another recipe please if mrs jones won’t be suitable hope this all makes sense many thanks I’ve got till the 1 st no to get it right also can you use your choc cake mix for cup cakes

Paul’s recipe makes quite a heavy cake. If you dowel the vanilla sponge as Paul shows us in the tutorials your 7″ cake should be fine to stack. I use Jane Hornby’s vanilla cake recipe, it makes a lovely moist but firm cake. The small amount of plain flour in the recipe helps to give a better structure for stacking on. Here is the recipe

Wright’s cake mixes are also very good, much better than the average box mix. They have a recipe section on their site. Take a look here for all the different flavour cake mixes here:

These can be bought in most supermarkets so you don’t have to buy from their site.
If you click on recipes and go to cakes scroll down and click on ‘wedding’ This will take you to amounts of mix for different size tins, cupcakes, baking times and temperatures to bake.
I don’t know anything about other cake mixes, I don’t use them, so not much help to you on that one!
