Metal Rule

Just watched tools tutorial.
The metal rule that Paul uses to level across the top of his ganached cake. Is it an ordinary metal ruler or is it best to buy aluminium (lighter).
Guidance please. He mentioned it was expensive but they are coming out on Amazon quite cheap.

Hi AnnieLaurie

I prefer the stainless rule as a dual purpose tool. It’s slightly heavier and holds heat better for ganache and chocolate work and of course brilliant for royal icing. See both types of rules here:

ThankQ so much! I’m new to Paul’s site and just can’t drag myself away – another two hours have just gone by.
Think I will subscribe. He is so good at demonstrating and so “human” with it!.
Next project is a baby cake so really looking forward to using some of his tips and definitely buying the rule you recommended.
