Icing sugar or cornflour?

Wheroll long sugar paste, would you dust with icing sugar or cornflour?

Personal preference I like using cornflour but when wasn’t on Paul’s class he used icing sugar. I find icing sugar dries the sugarpaste out and feels more gritty

I use icing sugar for pale colours and a smear of trex for dark colours so I don’t get white marks. Corn flour (as well as some other cereals and rice) can contain a bacteria that causes food poisoning and whilst it’s highly unlikely to happen its a risk I don’t need to introduce, and as I am selling my cakes, I dont use it! I had no idea about the corn flour until I went on my food hygiene course!

I’ve always used icing sugar.  I only use cornflour when frilling ‘garrett frills’.
