Fruit cake with alcohol

Hi, I have a wedding cake to make at the end of October and I have been asked for a fruit cake that has been matured with brandy. I don’t have a recipe for a fruit cake with alcohol only for one without. Can I use my existing recipe but just soak the fruit before hand and then drench the cake weekly or do I need a completely different recipe. Can anyone help? Thank you

Hi Deborah

You can use any rich fruit cake recipe for the cake. You can soak the fruit of your exisisting recipe and feed the cake until required. Mrs Jones’ has her fruit cake recipe here:
