Freezing Cakes

I have just started making cakes mostly for family and friends. At the moment I bake my cakes one day and decorate the next but fitting this in with a full time job isn’t the easiest. I heard Paul freezes most of his cakes until time to decorate. Has anyone tried this? When do I take the cakes out to defrost? Does it not compromise the taste of the cake or dry it out? Your help would be appreciated.

Hi Michelle  yes you can freez them I all so have mine frozen when I cover tHeminn marzipan or sugar paste I think keeps the firm and better to decorate graham farrar

Hi marsia40

It’s fine to level them when you begin the defrosting. It’s easier if you do it when the cake is still slightly frozen because it handles better. Freezing cakes can sometimes flatten them out so you may find trimming will be minimum. G’d luck with your friend’s wedding.

Hi Michelle, I tried this test just the other week! I baked a vanilla cake and cut it in two. One half I wrapped in two layers of cling film and a freezer bag and stuck in the freezer. The other half I covered with sugar paste and put in a cake box in my dining room. A week later I took the one out of the freezer and let it defrost still wrapped up. Then we tasted them both. The one that was frozen was really moist and delicious. The sugar pasted one ever so slightly drier but still moist and my husband took his testing role to the extreme by leaving a bit wrapped in cling film in the kitchen for another week before eating. I told him he didn’t have to eat it but he said it was still nice!!

Thanks very much for your help. I will definetly give the taste test a go and let everyone know how I get on. It would make my life so much easier to do it this way as it does get a bit stressfull baking and decorating all in the one go.

Sorry to butt in but am also thinking about freezing sponges for a wedding cake I’m making.

How long before use can you freeze?

Best way to wrap them?

Do you split and level cakes before freezing?

Hi jb1958, you can freeze the cake for up to a month and you can split and level first if you prefer and also fill with buttercream. I’m not sure if you can freeze if filled with ganache, maybe someone else can help with that?

I double wrap in clingfilm and put in a large freezer bag but you can also wrap in baking parchment and then cling film if you prefer. I don’t think it really matters as long as there’s a couple of layers and it’s airtight. Good luck with your wedding cake!

I have frozen cakes for my friends wedding and so this page has been really helpful! I have not yet levelled the cakes though and planned to do this once they are defrosted. Will it be okay, or should i have levelled them before freezing them??
