Fixing a cake on top of a Dummy Cake

Hi, I’m making a four tier cake where the bottom tier is a dummy one. Each tier is 5″ deep and start from the dummy one which is 12″ round, going up 10″ 8″ and 6″ rounds. I plan to stack and transport in two sections so need to stack the 10″ on top of the 12″ dummy. As I can’t get dowels into the dummy cake, I’m wondering the best option for fixing the 10″ on top so it won’t move during transportation. Your advice is always appreciated. Many thanks x

Hi suzq

I use either royal icing or melted chocolate. I think since it’s quite a large surface, royal icing will be better.
Dowel and stack the others as shown in the tutorials. Transport all the cakes in their boxes sitting on nonslip siliconised rubber mats. If you need any more information or help post again. xx

I am thinking about cutting out a circle of sugarpaste from the top of the dummy cake so the one above sits directly on to the polystyrene, and fix it with double sided tape. A little fiddly but wondering if this would make it firmer. What do you think?

I’ve never used double sided tape, I really don’t think that would make it firmer. However I feel sugarpaste and royal icing will make a stronger bond when a real cake is placed on top of a dummy. Less risk of the cake becoming unstuck and shifting.
