Dropping modelling chocolate

I’ve made the peppa pig cake and used modelling chocolate for the trees. I went to stick the trees on just now and the branches started dropping and falling off. Should I have mixed CMC in, or chilled them……help! It’S my daughters 4th birthday party on Sunday and I want the cake to look nice

I had already used the edible glue, so was considering regluing with the melted chocolate as you suggested, but explored what was happening I. A bit more detail first. It seems the issue is where I’ve made thinner branches, and the weight of the sugar paste leaves are too much. I thickened up the branches a bit and it seems to have solved the problem.

Thanks for your advice, I was very impressed by the speed of response.

Hi Karen

A little melted chocolate can be used as glue for the branches. Melt the chocolate gently on low heat of the microwave for a few seconds at a time. Leave a few lumps, mix to melt them down. The chocolate will thicken. Place in a parchment piping bag and use to secure the branches. Wait until the chocolate has completely hardened before moving the trees. You could also try edible glue made with a little warm water and tylose.

You’re welcome Karen! Glad you’ve managed to solve the problem. I always keep candy melts in the draw for gluing purposes. It saves a lot of hassle tempering chocolate for small things.
