Does icing preserve a sponge cake with butter icing?

I have just completed a beautiful (even if I do say so myself lol) three tier vanilla sponge with butter icing and jam wedding cake. I am sure I read somewhere that my sponge and butter icing will be fine after the fondant cover is on. My worry is, as I actually completed all the covering last week (due to work commitments and my need to be organised) making the cake two weeks old by the time it will be cut …..will the cake be ok? Im having a crisis of confidence cos now I cant find where I read that and have visions of my bride’s guests biting into this cake and the butter icing being off. HELP!!!!

If it has no mould growth it should be ok but I think it will taste a bit funny, two weeks for a sponge is really too long, especially for a wedding cake. I’ve kept sponge cake for over a week before now and can’t say it was very enjoyable. I really don’t think it will taste very fresh. I’m hoping other members will chime in, perhaps they have a different experience. I’ve just googled ‘how fresh will a two week sponge cake taste’ and found all different opinions, it might help if you do the same and have a read through some of the comments then decide. I feel for you x

If you’ve baked madeira cake then it will be fine but you’re taking a chance with normal sponge which has a shelf life of 5 days for freshness and moistmess. Sugarpaste and buttercream will act as preservative but sponge cake dries out. It can be kept moist for a few more days if you brushed each layer with simple syrup. I wouldn’t be as worried about the icing as I would about the cake itself. I can’t say to you it will be fine because I can’t say how fresh the sponge will taste. x

I have kept sponge cakes in the fridge for over a week and it was very fresh, I found the fondant helped keep it fresh. You can of course freeze it if you have no colours on it!

I hope you’ve been lucky loufairy2, especially as this was such a kind gesture from you to your friends.
Would really like to hear from you how it came out, what temperatures it withstood and how it was stored. I’m sure it will help other members who may experience the same dilema in the future. If you want a longer shelf life bake a madeira and brush it with lots of simple syrup. Some mud cakes have good keeping qualitites too. xx

aw thank you everyone,just came from the wedding but they still hadnt cut it, It was a gift from me, so I do hope its ok, or at least not too bad. Def lesson learned.

thank you so much MIWL and cndy1. I havent heard yet if the cake was even cut! The bride loved it so much she said she wouldnt lol, (think Im probably quite happy bout that for the first time ever!!) I have everything crossed though. I shall certainly let you know xx
