Defrosting a buttercream/ganache sponge.

I am taking a sponge cake out of the freezer today, it has been filled and covered with buttercream/ganache, do I leave it wrapped in cling film or remove this to let it defrost?

Thank you,

Hi nicky223

It’s best to leave the cling film on but if you are defrosting in a box it can be taken off. Keeping the cake in a box also helps it adjust gently to room temperature.

Don’t worry nicky223, even I don’t get the abbreviation right. I don’t know who started it originally but it seems everyone is using the abridged version now. How’s your cake doing? x

Cake was fine, I let it defrost with the clingfilm on, next time I will try the other way and leave it in the box. .

Which ever way you decide, protect the cake from airborn naties by keeping it covered. x
