Chocolate making

If you have experience with chocolate making I need some guidance here. I have recently bought a Jewelry box mold and decorated it with white chocolate. After I melted the white chocolate it was nice and smooth but as soon as I added the color it clumped so I thinned it with crisco. It worked well so I painted the mold, put it in the fridge then added the white. It looked good through the mold so I let it sit in the fridge over night. When I went to pop it out a lot of the colored parts stuck to the mold. Now I have to start over. Do you have any suggestions or recommendations ? Any help would be appreciated. Thank You. (ps. I’m putting a sleeping baby made out of fondant in side the box for my friend who is pregnant and is having a hard time with the pregnancy. I hope this will make her feel better. Good thing I have 9 months to make this. I haven’t even started the baby yet.)

How sweet and thoughtful you are in wanting to make your friend feel better. I’ll try and help you with your box.
You didn’t say what type of chocolate you’ve used. If you used compound chocolate it will not require tempering, however if you’ve used real chocolate it will need tempering first before you can do your painting. If you have used a water based colour the chocolate will seize (go into a clump) and also become grainy and will not unmould with ease. Use an oil based colour or mix powdered colours with either melted cocoa butter or melted crico. Once you’ve melted the fat, mix in a little powdered colour and dab the mould with it using a paint brush or even a piece of kitchen towel. The fat/colour will set up, this is the point where melted/tempered chocolate is poured to coat the mould. To make the shell of your box thicker, let the first coat set up for a few minutes then coat again. If the chocolate has been tempered properly the moulded piece will pop out easily and have a high glossy shine. It doesn’t need refrigerating overnight. You’ll know the piece is ready when you can see that it has shrunk away from the sides of the mould.

To prevent finger marks on you moulded chocolate items, wear thin catering gloves when handling.
