chocolate covered cake

ive been asked to make a cakeand they want it covered in milk chocolate is it best to do it in chocolate ganache

You may be better off covering it in milk chocolate modelling paste rather than ganache. It depends really how long the ganache will be exposed to the air. Normally ganache is covered with sugarpaste which helps preserve the shelf life. If you do it in ganache let it set really hard then cover it in clingfilm which will reduce airborn nasties settling on it. Keep it in a very cool environment or even boxed up and stored in the fridge.
Modelling chocolate can be mixed 50/50 with chocolate flavoured sugarpaste or you could use roll out chocolate flavoured icing. Beau products make a lovely range of flavours, here is the link for their site:
