Air bubbles in fondant

I keep getting air bubbles when I roll out fondant (these are in the fondant itself, not between the ganache and fondant). I know it’s not the fondant I’m using, as it’s happening with Couture and Renshaws. I’ve noticed it’s much worse when the fondant has been kneaded quite a bit, say to put in a colour as I’m obviously getting a bit of air in there! The Couture one needs quite a bit of kneading as it’s fairly solid and I’m having issues with this too, although finding it excellent to cover cakes, being a bit novice at this – it helps me along a bit! I’ve tried getting rid of the bubble with a needle, but it doesn’t always work and leaves a tiny indent (and still part of the bubble) which, despite lots of massaging, always seems to be there.

Hi Topsy

Basically you’ve answered your own question. Kneading does indeed trap air into the icing causing the bubbles which you are experiencing. It can happen in all brands of sugarpaste and more so when colour is being added. I find the best thing is to colour icing up a couple of days in advance and allow it to rest until needed. When the icing is required, knead it just enough to make it supple and no more. This will hopefully reduce the airbubbles.
If you’re having to colour large quantities of sugarpaste, it may be less stressful and more economical in the long run, to buy ready coloured paste.
