12″ Oval Sponge using Mrs Jones recipe

i am trying to make a birthday cake never had a problem with my normal recipe for madeira cakes and have made two which are really greasy and heavy.
Going to have third attempt cake needed for Sunday .
What quantities would I use of Mrs Jones Sponge and can I bake in one tin as I don’t have two tins?

Hi suzyb53

Recipes can be scaled either using the ready reckoner or cakeometre tools here:

I know members have baked Mrs Jones’ recipe in one tin successfully. However, to be absolutely certain, Mrs Jones has kindly said she will contact you on this page as soon as she is able with her own answer. Keep an eye out for her. Hope that’s ok! x

Hi suzyb53

Mrs Jones advises you use the following ingredient amounts for your cake:

800g caster sugar
800g unsalted butter
14 medium eggs (700g)
800g self raising flour
4 teas spoonfuls vanilla extract

The above mixture is suffcient for two deep 12″ round or oval cakes. It is too much to bake all of the mixture in one tin. To bake single layers divide and mix up the recipe individually and bake one at at time. The recipe can also be divided into thirds if you want to make three layer. If you want this sponge for stacking add 10% more flour to give the batter a little more strength. Leave the remainder of the ingredients as they are. Bake layers for 40- 50 minutes, until golden and shriking away from the sides of the tin. Once baked cool completely and wrap in cling film. Store in fridge for 24 hours if you need to.
I hope this helps. x
