Overview - Mrs Jones' Vanilla Cupcakes

Ever had frustration at not being able to bake that perfect cupcake? Help is at hand as we have teamed up again with Mrs Jones who takes you through the whole delicious vanilla cupcake recipe from start to finish. Watch out for the second part of the shoot when the cupcakes come out the oven there was one missing before the cameras were turned on. All I can say was it was delicious.1. Preheat the oven to 150C (fan oven).
2. Break eggs into a jug and lightly beat together.
3. Cream margarine (or butter) and castor sugar till light and fluffy.
4. Pour eggs slowly into mixture and beat well in between.
5. Add the vanilla extract and beat well.
6. Sift in the flour and cornflour, and add the baking powder. Combine till just mixed in and no more.
7. Add the milk and gently mix in.
8. Half fill the muffin cases with the mixture.
9. Bake in the oven for 18 – 20 minutes till pale golden in colour.
10. Place the cupcakes on a wire tray to cool down.
11. Decorate when cold. We usually do this within the hour.
